Bread: Not Just for Sandwiches!

Last time we got adventurous with our bread, we turned it into toast four ways. Now, we’re going to show you a few new ways you can enjoy your gluten-free bread at home that’s outside of the toast/sandwich spectrum. Read through to get some delicious recipes using our Rustic White loaf.

Crostini with Homemade Bruschetta

Ingredients:

  • Rustic White Loaf
  • 2 cups diced Grape Heirloom Tomatoes
  • 3 tbsp chopped fresh basil
  • ½ cup finely chopped red onion
  • 2 cloves crushed garlic
  • 3 tbsp olive oil
  • 1 ½ tbsp balsamic vinegar
  • Salt and pepper to taste

Method:

Preheat oven to 350 degrees F. Place parchment paper on a baking sheet and cut a slice of Rustic White loaf in half. Drizzle with olive oil, place on baking sheet and bake for 10-15 minutes.

To make the bruschetta, chop and combine all ingredients into a small bowl.

Once the crostini is done, place the bruschetta on top and enjoy for a light lunch or afternoon snack!

Croutons

Ingredients:

  • Rustic White Loaf
  • 1 tbsp finely chopped parsley
  • 2 cloves crushed garlic
  • 3 tbsp olive oil
  • Salt and pepper to taste

Method:

Preheat oven to 350 degrees F. Trim off the crust of the rustic white loaf, and cube loaf into 1” cubes. Toss with 3 Tbs olive oil, 2 crushed garlic cloves, and 1 Tbs finely chopped fresh parsley and bake in oven until they are toasted, about 10 - 15 mins, tossing in the middle, until nicely golden brown.

Enjoy on any salad of your choosing! We like to toss on Panzanella. Ingredients below for this tasty salad rendition.

Toss these ingredients in a large bowl:

  • 6 tomatoes, cubed
  • 1 red bell pepper, cubed
  • 1 cucumber, cubed
  • 1/2 red onion, diced
  • 1 clove garlic
  • 1 bunch basil, coarsely chopped

Dressing:

  • 1 tsp honey
  • 3 tbsp red wine vinegar
  • Pinch salt
  • Pinch black pepper
  • Pour in while whisking:
  • 1/4 c olive oil

Toss dressing in with the salad until coated. Toss in the croutons (from one loaf of rustic white) and serve immediately.

Baked Egg and Bacon Wrapped in Bread

Ingredients:

  • Rustic White Loaf
  • 1-2 slices of bacon
  • 1-2 eggs (depending on size of dish)
  • Salt and pepper to taste
  • Parsley (optional)

Method:

Preheat oven to 375 degrees F. Place bread in base of your dish, (you can use a ramekin or a cupcake mold) filling in spaces around the sides when needed. Wrap bacon around bread, and crack an egg in the middle of the dish. Add salt and pepper to taste and place in oven for 20-25 minutes, until egg is cooked and bacon is crispy and chewy. Garnish with parsley and enjoy!
